When I found out about the three-ingredient peanut butter cookies I was excited, but I found myself bored quickly with them. After the first few times we made them in our house, they just weren't hitting quite right. We needed it to be less spoonful of peanut butter and something more like a real cookie. It took me quite a few trials, but my family "suffered" through taste testing the samples and I'm definitely satisfied with where the recipe has landed. These cookies are seriously the easiest things to make and HIGHLY addicting. Don't say I didn't warn you! 😜


Keto Peanut Butter Chocolate Chip Cookies

Yield: 24 Cookies

Ingredients:

  • 1 cup Peanut Butter
  • 1 Egg
  • 1/2 cup Lakanto Classic
  • 1/4 cup  Lakanto Golden
  • 1 tsp vanilla extract
  • 1/4 cup Choc Zero milk chocolate chips

Instructions:

  1. Hand mix peanut butter, egg, lakanto, and vanilla until well combined
  2. Fold in the chocolate chips
  3. Scoop the dough into 24 balls and spread them out on the baking sheet
  4. Flatten the cookies  with your hand and use a fork to create hash marks across them
  5. Bake at 350 degrees for 12 minutes

Notes:

Let them cool for at least 30 minutes before eating so they can set
