This one came out of a desperate attempt to eat SOMETHING other than scrambled eggs during my first egg fast. I wanted to use fathead dough, but I was hoping for the pasta to be a little denser like gnocchi. I omit the egg whites, didn't add any cream cheese, and it turned out absolutely delicious if I do say so myself!
Garlicky Pillowy Goodness
A quick warning if you decide to try these delicious little pillows, the dough is INCREDIBLY sticky. If I wasn't starving when I created the dish, I might have given up because it was such an awkward texture to knead at first. In the end, I was truly happy that I kept going because these totally hit the spot!
Egg Pillow Pasta

A savory egg fast dish!
ingredients:
- 3 egg yolks
- 1/2 cup mozzarella
- 1/4 tsp garlic powder
- 1/4 tsp Italian seasoning

How to cook Egg Pillow Pasta
- Microwave the mozzarella until completely melted. (About 30-60 seconds)
- Add the egg yolks one at a time and knead. The dough will be VERY sticky.
- With the last egg, add the seasonings and continue to knead until everything is combined. (Don’t get discouraged if it looks a hot sticky mess, it does take a minute to combine!)
- Refrigerate for 10 minutes for the dough to set.
- Rip globs of the dough and add them to a dry pan on medium heat.
- Cook for 2-3 minutes on each side. (Flip the pillows once they’re browned and forming little bubbles around the edges.)
NOTES:
The dough can be difficult to work with, but well worth the effort!
