Egg Pillow Pasta

Because you can't just eat scrambled eggs! ๐Ÿ˜œ

This one came out of a desperate attempt to eat SOMETHING other than scrambled eggs during my first egg fast. I wanted to use fathead dough, but I was hoping for the pasta to be a little denser like gnocchi. I omit the egg whites, didn't add any cream cheese, and it turned out absolutely delicious if I do say so myself!





Garlicky Pillowy Goodness



A quick warning if you decide to try these delicious little pillows, the dough is INCREDIBLY sticky. If I wasn't starving when I created the dish, I might have given up because it was such an awkward texture to knead at first. In the end, I was truly happy that I kept going because these totally hit the spot!

A savory egg fast dish!

ingredients:

  • 3 egg yolks
  • 1/2 cup mozzarella
  • 1/4 tsp garlic powder
  • 1/4 tsp Italian seasoning

instructions:

How to cook Egg Pillow Pasta

  1. Microwave the mozzarella until completely melted. (About 30-60 seconds)
  2. Add the egg yolks one at a time and knead. The dough will be VERY sticky.
  3. With the last egg, add the seasonings and continue to knead until everything is combined. (Don’t get discouraged if it looks a hot sticky mess, it does take a minute to combine!)
  4. Refrigerate for 10 minutes for the dough to set.
  5. Rip globs of the dough and add them to a dry pan on medium heat.
  6. Cook for 2-3 minutes on each side. (Flip the pillows once they’re browned and forming little bubbles around the edges.)

NOTES:

The dough can be difficult to work with, but well worth the effort!
