Whiskey Maple Mustard Brussels

Author: Erika "Ketonomic" Williams
Prep time: Cook time: Total time:

Ingredients:

  • 1/2 lb bacon
  • 12 oz Brussels sprouts trimmed & cut in half
  • 1/4 small diced red onion
For the sauce
  • 1/3 cup sugar free maple syrup (I use ChocZero Maple Syrup. Save 10% on your order using code KETONOMIC at checkout!)
  • 1/4 cup French's yellow mustard
  • 1 Tbs whiskey

Instructions:

  1. Cut the bacon into 1/4 inch strips and fry up on medium heat until crispy
  2. Remove the bacon, set aside, and add the Brussels to the pan. Try not to move them too much so they have a chance to caramelize.
  3. When the Brussels are about halfway through cooking and have a nice color to them, scoot them to the side and add the diced onion.
  4. Cook the onion, occasionally stirring until the onions become lucid. Then add the French's mustard, ChocZero maple syrup, and whiskey. Stir to create a sauce, adding a tsp of water at a time if it appears too thick.
  5. Stir the sauce into the Brussels and top with the crispy bacon!

Notes:

Serve this alongside a lean piece of meat for more robust, protein packed meal!
