A quick weeknight meal that's sure to impress the fam!
Hubby and I were craving dinner from the taqueria one night. I was nervous because our conversation was definitely leading in the direction of dinner out, which always equals extra money and extra weight on the scale.
We were torn between having an indulgent meal and staying on track, but we'd already been doing so well that week. We ultimately decided that undoing all of our progress with one dinner was not in the plans.
I still wanted that taqueria style dinner though and I obviously wasn't in the mood to do a lot of cooking. I peeped in the fridge and found a package of Del Real carnitas, Cut Da Carb Wraps, and threw together these crispy bad boys!!!

Here's a quick tutorial vid of the steps I took to create these delicious taquitos. The printable recipe card is just below that. These were seriously easy because they only require 4 ingredients to make!!! (Not including the oil or desired toppings. ๐)
At the end of the night, I dirtied one bowl, one knife, and the air fryer needed a quick wipe. Not too bad for the middle of the week. ๐คท The macros were also on point for me after I added the toppings that I wanted and we saved a lot of money by eating at home!

Carnitas Taquitos
Yield: 4 servings (2 Taquitos/serving)

ingredients:
- 1 lb Del Real carnitas
- 2 Tbs Kinders tequila lime seasoning
- 2 Tbs Cholula
- 2 Cut Da Carb Wraps
- 1 Tbs avocado oil
instructions:
How to cook Carnitas Taquitos
- Preheat air fryer to 400 degrees
- Combine the carnitas with seasoning and hot sauce and set aside
- Cut the wraps into fourths (8 pieces total)
- Spoon 1/8 of the mixture into a wrap and roll it tightly
- Keep rollin' rollin' rollin' until you've done each wrap and you have no mixture left
- Place the rolls into the preheated air fryer
- Brush each roll with oil and bake at 400 degrees for 15 minutes or desired crispiness
- Top with your favorite condiments! (The ones pictured have crema, hot sauce, Cotija cheese, and lettuce)
